Detailed information on BOURBON PAPAYO - Semi Washed.

BOURBON PAPAYO - Semi Washed.

This is not an ordinary coffee, ITS AN EXTRAORDINARY COFFEE!

Exclusive Microlot | Palestina, Huila | 1900 M.s.n.m

Diego Rodriguez, producer.

Score: +85.5

Altitude: 1900 m.a.s.l

Varietal: BOURBON PAPAYO

Farm: El Filo, Palestina , Huila, Colombia

MEDIUM ROAST.

This microlot is more than rare.

It is a testament to courage, lineage, and the quiet strength of families who choose to bloom again.

The producer of this coffee named, Diego Rodriguez,  third generation of Coffee farmers.  His family farm in Palestina, Huila, it is the place that this coffee was born and cultivated at 1900 meters above sea level, developing remarkable sweetness and complexity.

Diego’s grandparents, Alfonso Rivas and Gloria Burbano, fled armed violence in Caquetá during the 1980s. Seeking safety and a new beginning, they arrived in Huila and built what would become a three-generation coffee legacy. Today, their children, grandchildren, and even great-grandchildren continue cultivating these rare Bourbon Papayo trees with devotion, nurturing not only the plants, but the resilience and love that carried their family through reinvention.

This Bourbon Papayo is an exceptionally rare and highly sought-after variety, known for its elongated cherries that resemble a small papaya  a unique mutation within the Bourbon family that few farmers cultivate due to its low yields and demanding agronomic care. It is delicate, uncommon, and truly special.

Tasting Notes:

Juicy peach, Red berries, Balanced, round, elegant finish and an incredible after taste of sugar cane.

The semi-washed process enhances clarity while preserving its natural fruit character, creating a cup that feels both vibrant and harmonious.

🔄 The Ritual

Brewing it slowly  in a V60, dripper, or Kalita like listening to your favorite song and discovering each hidden instrument.

This coffee is harvested following strict ripeness criteria, floated, and hand-sorted to remove any defects.
