About Tencha:
Tencha is the prized tea leaf essential for crafting matcha. Following methods similar to gyokuro cultivation, the tea plants are carefully shaded from direct sunlight for approximately 20 days before harvest. This traditional shading technique reduces catechins while enhancing the production of umami-rich theanine. After careful harvesting, the leaves undergo steaming and drying without rolling, yielding the distinctive tencha leaves.
